For the Crust:

  • 1 lb pizza dough, at room temperature
  • 2 large yellow onions, thinly sliced
  • 2 tbsp olive oil
  • 1/2 cup dried cranberries
  • 1 1/2 cups shredded Gruyère cheese
  • 1 tsp fresh thyme leaves
  • Salt and black pepper to taste
  • 1 tbsp balsamic glaze (optional, for drizzling)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 425°F (220°C). Stretch pizza dough into a rustic oval or rectangle on a parchment-lined baking sheet.
  2. Heat olive oil in a skillet over medium-low heat. Add onions and cook, stirring occasionally, until deeply golden and caramelized, about 20–25 minutes. Season with salt and pepper.
  3. Spread caramelized onions evenly over the pizza dough. Top with shredded Gruyère cheese and dried cranberries.
  4. Bake for 12–15 minutes, until crust is golden and cheese is bubbly. Remove from oven and sprinkle with fresh thyme.
  5. Drizzle with balsamic glaze if desired, slice, and serve warm.

Notes

You can customize the seasonings to taste.
