For the Crust:
- 1 lb pizza dough, at room temperature
- 2 large yellow onions, thinly sliced
- 2 tbsp olive oil
- 1/2 cup dried cranberries
- 1 1/2 cups shredded Gruyère cheese
- 1 tsp fresh thyme leaves
- Salt and black pepper to taste
- 1 tbsp balsamic glaze (optional, for drizzling)
Instructions
1. Prepare the Crust:
- Preheat oven to 425°F (220°C). Stretch pizza dough into a rustic oval or rectangle on a parchment-lined baking sheet.
- Heat olive oil in a skillet over medium-low heat. Add onions and cook, stirring occasionally, until deeply golden and caramelized, about 20–25 minutes. Season with salt and pepper.
- Spread caramelized onions evenly over the pizza dough. Top with shredded Gruyère cheese and dried cranberries.
- Bake for 12–15 minutes, until crust is golden and cheese is bubbly. Remove from oven and sprinkle with fresh thyme.
- Drizzle with balsamic glaze if desired, slice, and serve warm.
