Description

A savory, free-form tart with a flaky crust, filled with sweet caramelized onions and earthy sautéed mushrooms, perfect for a cozy meal.

For the Crust:

  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1/4 cup ice water
  • 2 large yellow onions, thinly sliced
  • 8 ounces cremini mushrooms, sliced
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon fresh thyme leaves
  • 1/2 teaspoon black pepper
  • 1/2 cup shredded Gruyère cheese
  • 1 egg, beaten (for egg wash)

Instructions

1. Prepare the Crust:

  1. In a bowl, mix flour and salt. Cut in butter until pea-sized crumbs form. Gradually add ice water until dough comes together. Wrap in plastic and chill for 30 minutes.
  2. Heat olive oil in a skillet over medium-low. Add onions and cook, stirring occasionally, until caramelized (about 25 minutes). Add mushrooms, balsamic vinegar, thyme, and pepper; sauté until mushrooms are tender (8-10 minutes). Let cool.
  3. Preheat oven to 400°F (200°C). Roll dough into a 12-inch circle on parchment paper. Spread cheese over center, leaving a 2-inch border. Top with onion-mushroom mixture.
  4. Fold edges of dough over filling, pleating as needed. Brush crust with egg wash. Bake for 25-30 minutes until golden. Cool slightly before serving.
