For the Crust:
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and black pepper to taste
- 4 large potatoes, peeled and cubed
- 1/2 cup milk
- 1/4 cup butter
- 1 cup carrots, sliced
- 1 cup bell peppers, chopped
- 1 cup zucchini, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- Fresh parsley for garnish
Instructions
1. Prepare the Crust:
- Season chicken breasts with garlic powder, paprika, salt, and pepper. Heat olive oil in a skillet over medium heat and cook chicken for 6-7 minutes per side until golden and cooked through. Set aside.
- Boil potatoes in salted water for 15-20 minutes until tender. Drain and mash with milk and butter until creamy. Season with salt and pepper.
- In the same skillet, add more olive oil if needed. Sauté onion and garlic for 2 minutes, then add carrots, bell peppers, and zucchini. Cook for 8-10 minutes until vegetables are tender-crisp.
- Serve chicken alongside mashed potatoes and sautéed vegetables. Garnish with fresh parsley.
