A hearty one-pan meal featuring tender roasted chicken, crispy potatoes, and fresh green beans, seasoned with herbs and garlic for a comforting dinner.

For the Crust:

  • 1 whole chicken (about 4 lbs), cut into pieces
  • 1.5 lbs baby potatoes, halved
  • 1 lb green beans, trimmed
  • 4 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp dried rosemary
  • 1 tsp dried thyme
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 lemon, sliced
  • 1/4 cup chicken broth

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). In a large bowl, toss chicken pieces, potatoes, and green beans with olive oil, garlic, rosemary, thyme, salt, and pepper until evenly coated.
  2. Arrange the chicken, potatoes, and green beans in a single layer on a large baking sheet. Place lemon slices over the chicken.
  3. Roast in the preheated oven for 25-30 minutes, or until chicken is cooked through and potatoes are tender. Add chicken broth halfway through to keep moist.
  4. Remove from oven, let rest for 5 minutes, then serve warm.
