For the Crust:
- 4 salmon fillets (6 oz each), skin-on
- Salt and black pepper to taste
- 2 tablespoons olive oil
- 4 tablespoons unsalted butter
- 3 cloves garlic, minced
- Juice of 1 lemon
- 2 tablespoons fresh parsley, chopped
- 1 teaspoon lemon zest
Instructions
1. Prepare the Crust:
- Pat salmon fillets dry and season both sides with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Place salmon skin-side down and cook for 5-6 minutes until skin is crispy.
- Flip salmon and cook for another 3-4 minutes until cooked through. Remove from skillet and set aside.
- Reduce heat to medium. Add butter to the skillet and let it melt. Add minced garlic and sauté for 1 minute until fragrant.
- Stir in lemon juice, lemon zest, and parsley. Cook for 1-2 minutes until sauce slightly thickens.
- Pour lemon butter sauce over salmon fillets and serve immediately.
