Description

A savory, rolled stromboli filled with Italian sausage, bitter broccoli rabe, and melted cheese, baked until golden and crispy.

For the Crust:

  • 1 lb pizza dough, store-bought or homemade
  • 1 lb Italian sausage, casings removed
  • 1 bunch broccoli rabe, trimmed and chopped
  • 2 cloves garlic, minced
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 tsp red pepper flakes
  • 1 egg, beaten (for egg wash)
  • 2 tbsp olive oil
  • Salt and black pepper to taste

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). In a skillet, heat olive oil over medium heat. Add sausage and cook until browned, breaking it up with a spoon. Add garlic and red pepper flakes, cook for 1 minute. Add broccoli rabe, season with salt and pepper, and cook until wilted, about 5 minutes. Let cool slightly.
  2. Roll out pizza dough on a floured surface into a 12×10-inch rectangle. Spread the sausage and rabe mixture evenly over the dough, leaving a 1-inch border. Sprinkle mozzarella and Parmesan over the filling.
  3. Starting from a long side, tightly roll the dough into a log, pinching the seam to seal. Place seam-side down on a parchment-lined baking sheet. Brush the top with beaten egg and slash the top a few times with a knife.
  4. Bake for 25-30 minutes, or until golden brown and cooked through. Let cool for 5 minutes before slicing and serving.

You can customize the seasonings to taste.
