For the Crust:

  • 1 lb boneless, skinless chicken breast, cut into bite-sized pieces
  • 2 cups broccoli florets
  • 1 cup sliced mushrooms (such as cremini or shiitake)
  • 3 cloves garlic, minced
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp sesame oil
  • 1 tbsp vegetable oil
  • 1/2 cup chicken broth
  • 1 tsp cornstarch mixed with 2 tbsp water
  • Salt and pepper to taste
  • Cooked rice for serving

Instructions

1. Prepare the Crust:

  1. Heat vegetable oil in a large skillet or wok over medium-high heat. Add chicken pieces and cook until browned and cooked through, about 5-7 minutes. Remove and set aside.
  2. In the same skillet, add broccoli and mushrooms. Stir-fry for 4-5 minutes until broccoli is tender-crisp and mushrooms are softened.
  3. Add minced garlic and cook for 1 minute until fragrant. Pour in soy sauce, oyster sauce, sesame oil, and chicken broth, stirring to combine.
  4. Return chicken to the skillet. Bring the sauce to a simmer, then stir in the cornstarch slurry. Cook for 1-2 minutes until the sauce thickens.
  5. Season with salt and pepper to taste. Serve hot over cooked rice.
