Description

A hearty one-pan meal featuring tender chicken, colorful bell peppers, fluffy rice, and crispy fries, all seasoned with herbs and spices for a comforting dinner.

For the Crust:

  • 2 boneless, skinless chicken breasts, cubed
  • 1 cup long-grain white rice
  • 2 cups frozen French fries
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • Salt and black pepper to taste
  • 2 cups chicken broth
  • 1/4 cup chopped fresh parsley

Instructions

1. Prepare the Crust:

  1. Heat olive oil in a large skillet over medium-high heat. Add chicken cubes and cook until browned, about 5-7 minutes. Remove and set aside.
  2. In the same skillet, add onion, bell peppers, and garlic. Sauté until softened, about 5 minutes.
  3. Stir in rice, paprika, oregano, salt, and pepper. Cook for 1 minute to toast the rice.
  4. Pour in chicken broth and bring to a boil. Reduce heat to low, cover, and simmer for 15 minutes.
  5. While rice cooks, bake French fries according to package instructions until crispy.
  6. Return chicken to the skillet, mix gently, and cook covered for another 5 minutes until rice is tender and liquid is absorbed.
  7. Top with baked fries and garnish with fresh parsley before serving.

Notes

You can customize the seasonings to taste.
