For the Crust:
- 2 boneless, skinless chicken breasts, cubed
- 1 cup long-grain white rice
- 2 cups frozen French fries
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 onion, diced
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon paprika
- 1/2 teaspoon dried oregano
- Salt and black pepper to taste
- 2 cups chicken broth
- 1/4 cup chopped fresh parsley
Instructions
1. Prepare the Crust:
- Heat olive oil in a large skillet over medium-high heat. Add chicken cubes and cook until browned, about 5-7 minutes. Remove and set aside.
- In the same skillet, add onion, bell peppers, and garlic. Sauté until softened, about 5 minutes.
- Stir in rice, paprika, oregano, salt, and pepper. Cook for 1 minute to toast the rice.
- Pour in chicken broth and bring to a boil. Reduce heat to low, cover, and simmer for 15 minutes.
- While rice cooks, bake French fries according to package instructions until crispy.
- Return chicken to the skillet, mix gently, and cook covered for another 5 minutes until rice is tender and liquid is absorbed.
- Top with baked fries and garnish with fresh parsley before serving.
