For the Crust:

  • 1 lb boneless, skinless chicken breast, cut into bite-sized pieces
  • 2 tablespoons soy sauce
  • 1 tablespoon cornstarch
  • 2 tablespoons vegetable oil
  • 1 red bell pepper, sliced
  • 1 cup broccoli florets
  • 1 carrot, julienned
  • 3 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 1/4 cup chicken broth
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • Cooked rice, for serving

Instructions

1. Prepare the Crust:

  1. In a bowl, toss chicken pieces with soy sauce and cornstarch; let marinate for 10 minutes.
  2. Heat vegetable oil in a large skillet or wok over high heat. Add chicken and stir-fry until cooked through, about 5-7 minutes; remove and set aside.
  3. In the same skillet, add bell pepper, broccoli, and carrot; stir-fry for 3-4 minutes until crisp-tender.
  4. Add garlic and ginger; stir-fry for 30 seconds until fragrant.
  5. Return chicken to skillet. Pour in chicken broth, oyster sauce, and sesame oil; stir to combine and cook for 2 minutes until sauce thickens slightly.
  6. Serve hot over cooked rice.

You can customize the seasonings to taste.
