A delightful twist on cheesecake, these individual cups blend creamy cheese with the tartness of cranberries and the crunch of pistachios for a savory-sweet appetizer or snack.

For the Crust:
- 8 oz cream cheese, softened
- 1/4 cup sour cream
- 1/4 cup finely chopped dried cranberries
- 1/4 cup shelled pistachios, chopped
- 2 tbsp honey
- 1 tsp lemon zest
- 1/2 tsp fresh thyme, chopped
- 1/4 tsp black pepper
- 1/4 tsp salt
- 1/2 cup crushed crackers or pretzels for base
- 2 tbsp melted butter
Instructions
1. Prepare the Crust:
- In a bowl, mix crushed crackers with melted butter; press into the bottom of small cups or jars.
- In another bowl, beat cream cheese, sour cream, honey, lemon zest, thyme, pepper, and salt until smooth.
- Fold in dried cranberries and half of the chopped pistachios.
- Spoon the cheesecake mixture over the crust in each cup.
- Top with remaining pistachios and chill for at least 1 hour before serving.
