Description

A delightful twist on cheesecake, these individual cups blend creamy cheese with the tartness of cranberries and the crunch of pistachios for a savory-sweet appetizer or snack.


Ingredients

For the Crust:

  • 8 oz cream cheese, softened
  • 1/4 cup sour cream
  • 1/4 cup finely chopped dried cranberries
  • 1/4 cup shelled pistachios, chopped
  • 2 tbsp honey
  • 1 tsp lemon zest
  • 1/2 tsp fresh thyme, chopped
  • 1/4 tsp black pepper
  • 1/4 tsp salt
  • 1/2 cup crushed crackers or pretzels for base
  • 2 tbsp melted butter

Instructions

1. Prepare the Crust:

  1. In a bowl, mix crushed crackers with melted butter; press into the bottom of small cups or jars.
  2. In another bowl, beat cream cheese, sour cream, honey, lemon zest, thyme, pepper, and salt until smooth.
  3. Fold in dried cranberries and half of the chopped pistachios.
  4. Spoon the cheesecake mixture over the crust in each cup.
  5. Top with remaining pistachios and chill for at least 1 hour before serving.

Notes

You can customize the seasonings to taste.
