For the Crust:
- 2 medium zucchinis, thinly sliced
- 1 cup all-purpose flour
- 3 large eggs
- 1/2 cup grated Parmesan cheese
- 1/4 cup olive oil
- 1/2 cup whole milk
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup fresh basil, chopped
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C) and grease a 9-inch round baking pan.
- In a large bowl, whisk together flour, eggs, milk, olive oil, Parmesan, oregano, salt, and pepper until smooth.
- Stir in sliced zucchini, chopped onion, minced garlic, and basil until well combined.
- Pour the mixture into the prepared pan and spread evenly.
- Bake for 30-35 minutes, or until golden brown and set in the center.
- Let cool for 5 minutes before slicing and serving.
