A dessert illusion turned into a savory masterpiece featuring golden brioche, earthy mushrooms, and a fluffy parmesan cloud.


Ingredients

For the Crust:

  • 4 slices brioche, toasted and cubed
  • 2 cups mixed wild mushrooms, sliced
  • 1 shallot, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup heavy cream
  • 1/2 cup grated parmesan cheese
  • 2 eggs, separated
  • 1 tbsp fresh thyme leaves
  • 1 tbsp olive oil
  • Salt and black pepper to taste

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). Heat olive oil in a pan over medium heat. Add shallots and garlic, sauté until translucent.
  2. Add mushrooms and thyme, cook until mushrooms are tender and liquid evaporates. Season with salt and pepper. Remove from heat.
  3. Whisk egg yolks with heavy cream and half the parmesan. In a separate bowl, beat egg whites until stiff peaks form. Gently fold into yolk mixture.
  4. Layer toasted brioche cubes in a baking dish. Top with mushroom mixture, then pour over the parmesan cloud mixture. Sprinkle remaining parmesan on top.
  5. Bake for 20-25 minutes until golden and puffed. Let rest 5 minutes before serving.

Notes

You can customize the seasonings to taste.
