For the Crust:
- 1 cup grated parmesan cheese
- 1/2 cup unsalted butter, softened
- 1 cup all-purpose flour
- 1/4 teaspoon salt
- 1 cup ricotta cheese
- 1/4 cup fresh basil, finely chopped
- 1 tablespoon honey
- 1/4 teaspoon black pepper
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a bowl, mix parmesan cheese, butter, flour, and salt until a dough forms. Roll into small balls and flatten into cookies on the baking sheet.
- Bake for 12-15 minutes until golden. Let cool completely.
- Combine ricotta, basil, honey, and black pepper in a bowl. Chill for 30 minutes.
- Spread basil-ricotta mixture between two parmesan cookies to form sandwiches. Freeze for 1 hour before serving.
