For the Crust:
- 1 cup all-purpose flour
- 1/2 cup grated parmesan cheese
- 1 tsp baking powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup milk
- 1 large egg
- 2 tbsp melted butter
- 1 cup ricotta cheese
- 1/4 cup fresh basil leaves
- 1 tbsp lemon juice
- 1/2 tsp garlic powder
- 1/4 tsp salt
Instructions
1. Prepare the Crust:
- Preheat waffle iron according to manufacturer instructions.
- In a large bowl, whisk together flour, parmesan, baking powder, salt, and pepper.
- In another bowl, whisk milk, egg, and melted butter. Pour wet ingredients into dry ingredients and stir until just combined.
- Cook waffles according to waffle iron instructions until golden and crispy. Set aside to cool slightly.
- While waffles cook, blend ricotta, basil, lemon juice, garlic powder, and salt in a food processor until smooth.
- Spread basil ricotta mousse between two waffle halves to form sandwiches. Freeze for 15 minutes before serving for best texture.
