For the Crust:

  • 1 cup all-purpose flour
  • 1/2 cup grated parmesan cheese
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup milk
  • 1 large egg
  • 2 tbsp melted butter
  • 1 cup ricotta cheese
  • 1/4 cup fresh basil leaves
  • 1 tbsp lemon juice
  • 1/2 tsp garlic powder
  • 1/4 tsp salt

Instructions

1. Prepare the Crust:

  1. Preheat waffle iron according to manufacturer instructions.
  2. In a large bowl, whisk together flour, parmesan, baking powder, salt, and pepper.
  3. In another bowl, whisk milk, egg, and melted butter. Pour wet ingredients into dry ingredients and stir until just combined.
  4. Cook waffles according to waffle iron instructions until golden and crispy. Set aside to cool slightly.
  5. While waffles cook, blend ricotta, basil, lemon juice, garlic powder, and salt in a food processor until smooth.
  6. Spread basil ricotta mousse between two waffle halves to form sandwiches. Freeze for 15 minutes before serving for best texture.
