For the Crust:

  • 1 cup shelled pistachios, finely chopped
  • 8 oz cream cheese, softened
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tsp lemon zest
  • 1 tbsp fresh lemon juice
  • 1/4 tsp smoked paprika
  • Salt and black pepper to taste
  • 1/4 cup brown sugar (for caramelized topping)
  • Fresh herbs (e.g., parsley or chives) for garnish

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). In a mixing bowl, combine cream cheese, sour cream, mayonnaise, Parmesan, garlic, lemon zest, lemon juice, smoked paprika, salt, and pepper. Mix until smooth and well blended.
  2. Fold in half of the chopped pistachios into the cream cheese mixture. Transfer the mixture to a small oven-safe dish or ramekin, spreading it evenly.
  3. Sprinkle the remaining chopped pistachios over the top of the dip. Bake in the preheated oven for 20-25 minutes, or until the dip is hot and slightly bubbly around the edges.
  4. Remove from oven and let cool for 5 minutes. Evenly sprinkle brown sugar over the top. Use a kitchen torch to caramelize the sugar until golden and bubbly, or broil in the oven for 1-2 minutes, watching closely to avoid burning.
  5. Garnish with fresh herbs and serve warm with crackers, bread slices, or vegetable sticks.
