For the Crust:
- 1 cup shelled pistachios, finely chopped
- 8 oz cream cheese, softened
- 1/2 cup sour cream
- 1/4 cup mayonnaise
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 tsp lemon zest
- 1 tbsp fresh lemon juice
- 1/4 tsp smoked paprika
- Salt and black pepper to taste
- 1/4 cup brown sugar (for caramelized topping)
- Fresh herbs (e.g., parsley or chives) for garnish
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). In a mixing bowl, combine cream cheese, sour cream, mayonnaise, Parmesan, garlic, lemon zest, lemon juice, smoked paprika, salt, and pepper. Mix until smooth and well blended.
- Fold in half of the chopped pistachios into the cream cheese mixture. Transfer the mixture to a small oven-safe dish or ramekin, spreading it evenly.
- Sprinkle the remaining chopped pistachios over the top of the dip. Bake in the preheated oven for 20-25 minutes, or until the dip is hot and slightly bubbly around the edges.
- Remove from oven and let cool for 5 minutes. Evenly sprinkle brown sugar over the top. Use a kitchen torch to caramelize the sugar until golden and bubbly, or broil in the oven for 1-2 minutes, watching closely to avoid burning.
- Garnish with fresh herbs and serve warm with crackers, bread slices, or vegetable sticks.
