For the Crust:
- 1 tbsp vegetable oil
- 2 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 6 cups vegetable broth
- 8 oz shiitake mushrooms, sliced
- 4 heads baby bok choy, chopped
- 12 frozen vegetable potstickers
- 2 tbsp soy sauce
- 1 tsp sesame oil
- 2 green onions, sliced
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- Heat vegetable oil in a large pot over medium heat. Add garlic and ginger, sauté for 1 minute until fragrant.
- Pour in vegetable broth and bring to a simmer. Add mushrooms and bok choy, cook for 5 minutes until vegetables begin to soften.
- Gently add frozen potstickers to the broth. Simmer for 8-10 minutes, until potstickers are cooked through.
- Stir in soy sauce and sesame oil. Season with salt and pepper to taste.
- Ladle soup into bowls and garnish with sliced green onions before serving.
