A comforting and aromatic soup featuring tender potstickers, earthy mushrooms, crisp bok choy, and a fragrant ginger-garlic broth.

For the Crust:

  • 1 tbsp vegetable oil
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 6 cups vegetable broth
  • 8 oz shiitake mushrooms, sliced
  • 4 heads baby bok choy, chopped
  • 12 frozen vegetable potstickers
  • 2 tbsp soy sauce
  • 1 tsp sesame oil
  • 2 green onions, sliced
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. Heat vegetable oil in a large pot over medium heat. Add garlic and ginger, sauté for 1 minute until fragrant.
  2. Pour in vegetable broth and bring to a simmer. Add mushrooms and bok choy, cook for 5 minutes until vegetables begin to soften.
  3. Gently add frozen potstickers to the broth. Simmer for 8-10 minutes, until potstickers are cooked through.
  4. Stir in soy sauce and sesame oil. Season with salt and pepper to taste.
  5. Ladle soup into bowls and garnish with sliced green onions before serving.

Notes

You can customize the seasonings to taste.
