For the Crust:

  • 1 baguette, sliced into 1/2-inch rounds
  • 2 large red bell peppers, roasted and sliced
  • 4 oz goat cheese, softened
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tbsp balsamic glaze
  • Fresh basil leaves for garnish
  • Salt and black pepper to taste

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). Arrange baguette slices on a baking sheet, brush with olive oil, and toast for 8-10 minutes until golden.
  2. In a bowl, mix softened goat cheese with minced garlic, salt, and pepper until smooth.
  3. Spread a layer of the goat cheese mixture onto each toasted baguette slice.
  4. Top each crostini with roasted red pepper slices and a fresh basil leaf.
  5. Drizzle with balsamic glaze and a final touch of olive oil before serving.
