A comforting and flavorful meal featuring tender seared chicken breasts, creamy herb sauce, fluffy rice, and crispy rustic potatoes for a complete dinner.

For the Crust:

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 cup long-grain white rice
  • 2 cups water
  • 4 medium potatoes, cubed
  • 2 tablespoons vegetable oil
  • 1 teaspoon paprika
  • 2 tablespoons fresh parsley, chopped

Instructions

1. Prepare the Crust:

  1. Season chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium-high heat and sear chicken for 6-7 minutes per side until golden and cooked through. Remove and set aside.
  2. In the same skillet, add garlic and sauté for 1 minute. Pour in chicken broth and heavy cream, stirring to combine. Add thyme and simmer for 5-7 minutes until sauce thickens slightly.
  3. While sauce simmers, cook rice according to package instructions with water until fluffy. In a separate pan, toss cubed potatoes with vegetable oil and paprika, then roast at 400°F for 25-30 minutes until crispy.
  4. Return chicken to the skillet with cream sauce, spooning sauce over the top. Serve chicken alongside rice and potatoes, garnished with fresh parsley.
