For the Crust:
- 1 lb large shrimp, peeled and deveined
- 2 ripe avocados, sliced
- 1 mango, diced
- 1/2 red onion, finely chopped
- 1 jalapeño, minced
- 1/4 cup fresh cilantro, chopped
- Juice of 2 limes
- 2 tbsp olive oil
- 1 tsp chili powder
- 1/2 tsp cumin
- Salt and pepper to taste
- 2 cups cooked quinoa or rice
Instructions
1. Prepare the Crust:
- In a bowl, combine mango, red onion, jalapeño, cilantro, and half the lime juice to make the salsa. Set aside.
- Season shrimp with chili powder, cumin, salt, and pepper. Heat olive oil in a skillet over medium-high heat and cook shrimp for 2-3 minutes per side until pink and cooked through.
- Whisk together remaining lime juice, a pinch of chili powder, and a drizzle of olive oil to make the lime-chili sauce.
- Assemble bowls with a base of quinoa or rice, top with shrimp, avocado slices, and mango salsa. Drizzle with lime-chili sauce before serving.
