A vibrant, tropical-inspired bowl featuring juicy shrimp, creamy avocado, and a fresh mango salsa, all drizzled with a zesty lime-chili sauce.

For the Crust:

  • 1 lb large shrimp, peeled and deveined
  • 2 ripe avocados, sliced
  • 1 mango, diced
  • 1/2 red onion, finely chopped
  • 1 jalapeño, minced
  • 1/4 cup fresh cilantro, chopped
  • 2 limes, juiced
  • 2 tbsp olive oil
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • Salt and pepper to taste
  • 2 cups cooked quinoa or rice

Instructions

1. Prepare the Crust:

  1. In a bowl, combine mango, red onion, jalapeño, cilantro, and half the lime juice to make the salsa. Set aside.
  2. Season shrimp with chili powder, cumin, salt, and pepper. Heat olive oil in a skillet over medium-high heat and cook shrimp for 2-3 minutes per side until pink and cooked through.
  3. Assemble bowls with a base of quinoa or rice, top with shrimp, avocado slices, and mango salsa. Drizzle with remaining lime juice mixed with a pinch of chili powder for the sauce.
