For the Crust:
- 1 lb large shrimp, peeled and deveined
- 2 tbsp olive oil
- 1 tsp chili powder
- 1/2 tsp cumin
- 1/2 tsp garlic powder
- 1/4 tsp smoked paprika
- Salt and pepper to taste
- 8 large butter lettuce leaves
- 1 cup diced tomatoes
- 1/2 cup diced red onion
- 1/2 cup chopped cilantro
- 1 avocado, sliced
- 1 lime, cut into wedges
- 1/4 cup sour cream or Greek yogurt (optional)
Instructions
1. Prepare the Crust:
- In a bowl, toss shrimp with olive oil, chili powder, cumin, garlic powder, smoked paprika, salt, and pepper.
- Heat a skillet over medium-high heat. Cook shrimp for 2-3 minutes per side until pink and cooked through.
- Wash and pat dry lettuce leaves to use as wraps.
- Assemble wraps by placing shrimp in each lettuce leaf, then topping with tomatoes, red onion, cilantro, and avocado.
- Drizzle with lime juice and add a dollop of sour cream or Greek yogurt if desired.
- Serve immediately and enjoy.
