Ingredients
Scale
For the Crust:
- 1 lb ground lamb
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp turmeric
- 1/4 tsp cayenne pepper
- Salt and black pepper to taste
- 1 tbsp olive oil
- 1 can (14 oz) diced tomatoes
- 1 can (13.5 oz) coconut milk
- 1 tsp garam masala
- Fresh cilantro for garnish
- 2 cups steamed basmati rice
Instructions
1. Prepare the Crust:
- In a bowl, combine ground lamb, half the chopped onion, half the minced garlic, cumin, coriander, turmeric, cayenne, salt, and pepper. Mix well and form into small meatballs (koftas).
- Heat olive oil in a large skillet over medium heat. Brown the koftas on all sides, about 5-7 minutes, then remove and set aside.
- In the same skillet, add the remaining onion and garlic. Sauté until softened, about 3 minutes. Stir in diced tomatoes, coconut milk, and garam masala. Bring to a simmer.
- Return the koftas to the skillet. Cover and simmer for 15-20 minutes, until the sauce thickens slightly and koftas are cooked through.
- Serve the koftas and sauce over steamed basmati rice, garnished with fresh cilantro.
