For the Crust:

  • 4 bone-in, skin-on chicken thighs
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt
  • 1 lemon, sliced (optional)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Pat chicken thighs dry with paper towels.
  2. In a small bowl, mix garlic powder, smoked paprika, onion powder, dried thyme, black pepper, and salt.
  3. Rub chicken thighs with olive oil, then coat evenly with the spice mixture.
  4. Place chicken thighs skin-side up on a baking sheet. Add lemon slices around them if using.
  5. Roast for 25-30 minutes, until skin is crispy and internal temperature reaches 165°F (74°C).
  6. Let rest for 5 minutes before serving.
