For the Crust:
- 4 bone-in, skin-on chicken thighs
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- 1/2 teaspoon onion powder
- 1/2 teaspoon dried thyme
- 1/2 teaspoon black pepper
- 1 teaspoon salt
- 1 lemon, sliced (optional)
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Pat chicken thighs dry with paper towels.
- In a small bowl, mix garlic powder, smoked paprika, onion powder, dried thyme, black pepper, and salt.
- Rub chicken thighs with olive oil, then coat evenly with the spice mixture.
- Place chicken thighs skin-side up on a baking sheet. Add lemon slices around them if using.
- Roast for 25-30 minutes, until skin is crispy and internal temperature reaches 165°F (74°C).
- Let rest for 5 minutes before serving.
