For the Crust:

  • 1 lb large sea scallops, patted dry
  • 2 tbsp olive oil
  • Salt and black pepper to taste
  • 1/4 cup fresh cilantro, chopped
  • 2 cloves garlic, minced
  • Juice of 2 limes
  • 1 tbsp honey
  • 1/4 cup extra virgin olive oil
  • 1/4 tsp red pepper flakes

Instructions

1. Prepare the Crust:

  1. Season scallops with salt and pepper on both sides.
  2. Heat olive oil in a large skillet over medium-high heat. Add scallops and sear for 2-3 minutes per side until golden brown and cooked through.
  3. While scallops cook, whisk together cilantro, garlic, lime juice, honey, extra virgin olive oil, and red pepper flakes in a small bowl.
  4. Transfer scallops to a serving plate and drizzle with the zesty lime cilantro sauce.
  5. Serve immediately and enjoy.
