For the Crust:
- 1 lb large sea scallops, patted dry
- 2 tbsp olive oil
- Salt and black pepper to taste
- 1/4 cup fresh cilantro, chopped
- 2 cloves garlic, minced
- Juice of 2 limes
- 1 tbsp honey
- 1/4 cup extra virgin olive oil
- 1/4 tsp red pepper flakes
Instructions
1. Prepare the Crust:
- Season scallops with salt and pepper on both sides.
- Heat olive oil in a large skillet over medium-high heat. Add scallops and sear for 2-3 minutes per side until golden brown and cooked through.
- While scallops cook, whisk together cilantro, garlic, lime juice, honey, extra virgin olive oil, and red pepper flakes in a small bowl.
