For the Crust:
- 1 lb large sea scallops, patted dry
- 2 tbsp olive oil
- Salt and black pepper to taste
- 1/4 cup fresh lime juice
- 1/4 cup chopped fresh cilantro
- 2 cloves garlic, minced
- 1 tbsp honey
- 1/4 tsp red pepper flakes
- 2 tbsp extra virgin olive oil
Instructions
1. Prepare the Crust:
- Season scallops with salt and pepper on both sides.
- Heat olive oil in a large skillet over medium-high heat. Add scallops and sear for 2-3 minutes per side until golden brown and cooked through.
- While scallops cook, whisk together lime juice, cilantro, garlic, honey, red pepper flakes, and extra virgin olive oil in a small bowl.
- Transfer seared scallops to a plate and drizzle with the zesty lime cilantro sauce.
- Serve immediately while hot.
