For the Crust:
- 1 pound large sea scallops
- 2 tablespoons olive oil
- Salt and pepper to taste
- Juice of 2 limes
- 1/4 cup fresh cilantro, chopped
- 1 garlic clove, minced
- 1 tablespoon honey
Instructions
1. Prepare the Crust:
- Pat the scallops dry with a paper towel and season with salt and pepper.
- Heat olive oil in a pan over medium-high heat. Add scallops and sear for 2-3 minutes on each side until golden brown.
- In a small bowl, whisk together lime juice, cilantro, garlic, and honey. Drizzle over scallops before serving.
