For the Crust:
- 2 large carrots, peeled and sliced into thin rounds
- 1 large apple (such as Honeycrisp or Granny Smith), cored and thinly sliced
- 1 tablespoon olive oil
- 1/2 teaspoon ground cinnamon
- Salt and black pepper to taste
- 4 ounces feta cheese, crumbled
- 2 tablespoons plain Greek yogurt
- 1 tablespoon honey
- 1 teaspoon freshly grated ginger
- Fresh thyme leaves for garnish (optional)
Instructions
1. Prepare the Crust:
- In a medium skillet, heat olive oil over medium heat. Add carrot slices and cook for 5-7 minutes until slightly softened.
- Add apple slices, cinnamon, salt, and pepper to the skillet. Sauté for another 5 minutes until apples are tender but still crisp. Remove from heat and set aside.
- In a small bowl, combine crumbled feta and Greek yogurt. Whip with a fork or whisk until smooth and creamy.
- In a separate small saucepan, warm honey and grated ginger over low heat for 1-2 minutes until fragrant. Remove from heat.
- To serve, spread whipped feta on a plate or in a shallow bowl. Top with the skillet carrots and apples. Drizzle with ginger honey and garnish with fresh thyme if desired.
