A sweet and savory side dish featuring tender carrots and crisp apples sautéed in a skillet, topped with creamy whipped feta and drizzled with warm ginger-infused honey.

For the Crust:

  • 2 large carrots, peeled and sliced into thin rounds
  • 1 large apple (such as Honeycrisp or Granny Smith), cored and thinly sliced
  • 1 tablespoon olive oil
  • 1/2 teaspoon ground cinnamon
  • Salt and black pepper to taste
  • 4 ounces feta cheese, crumbled
  • 2 tablespoons plain Greek yogurt
  • 1 tablespoon honey
  • 1 teaspoon freshly grated ginger
  • Fresh thyme leaves for garnish (optional)

Instructions

1. Prepare the Crust:

  1. In a medium skillet, heat olive oil over medium heat. Add carrot slices and cook for 5-7 minutes until slightly softened.
  2. Add apple slices, cinnamon, salt, and pepper to the skillet. Sauté for another 5 minutes until apples are tender but still crisp. Remove from heat and set aside.
  3. In a small bowl, combine crumbled feta and Greek yogurt. Whip with a fork or whisk until smooth and creamy.
  4. In a separate small saucepan, warm honey and grated ginger over low heat for 1-2 minutes until fragrant. Remove from heat.
  5. To serve, spread whipped feta on a plate or in a shallow bowl. Top with the skillet carrots and apples. Drizzle with ginger honey and garnish with fresh thyme if desired.

Notes

You can customize the seasonings to taste.
