For the Crust:
- 8 lamb chops (about 1 inch thick)
- 2 tablespoons olive oil
- Salt and black pepper to taste
- 4 cloves garlic, minced
- 1/2 cup red wine (such as Cabernet Sauvignon)
- 3 tablespoons honey
- 2 tablespoons soy sauce
- 1 tablespoon butter
- Fresh rosemary sprigs for garnish
Instructions
1. Prepare the Crust:
- Season lamb chops generously with salt and black pepper on both sides.
- Heat olive oil in a large skillet over medium-high heat. Add lamb chops and sear for 3-4 minutes per side until browned and cooked to desired doneness. Remove chops and set aside.
- In the same skillet, add minced garlic and sauté for 30 seconds until fragrant.
- Pour in red wine, honey, and soy sauce. Stir to combine and bring to a simmer, scraping up any browned bits from the bottom of the skillet.
- Cook the glaze for 5-7 minutes until slightly thickened. Stir in butter until melted and smooth.
- Return lamb chops to the skillet, spooning the glaze over them. Cook for an additional 1-2 minutes to warm through.
- Garnish with fresh rosemary sprigs and serve immediately.
