A warm, gooey brie cheese baked in a skillet with roasted garlic, fresh thyme, and a drizzle of spicy-sweet chili honey, perfect for sharing as an appetizer.

For the Crust:
- 1 whole brie cheese wheel (8 oz)
- 1 head of garlic
- 2 tablespoons olive oil
- 2 sprigs fresh thyme
- 1/4 cup honey
- 1/2 teaspoon red pepper flakes
- Salt and black pepper to taste
- Crusty bread or crackers for serving
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Slice the top off the garlic head, drizzle with 1 tablespoon olive oil, wrap in foil, and roast for 30 minutes until soft.
- Place brie wheel in a small cast-iron skillet. Drizzle with remaining olive oil and season with salt and pepper. Top with thyme sprigs.
- Bake brie in oven for 10-12 minutes until melted and bubbly. Meanwhile, mix honey and red pepper flakes in a small bowl.
- Squeeze roasted garlic cloves from skins and spread over melted brie. Drizzle with chili honey and serve immediately with bread or crackers.
