A tender, slow-braised beef roast infused with Mediterranean herbs and topped with a tangy-sweet cranberry balsamic glaze, perfect for a cozy family dinner.

For the Crust:
- 2 lbs beef chuck roast
- 1 tbsp olive oil
- 1 onion, sliced
- 4 garlic cloves, minced
- 1 cup beef broth
- 1/2 cup balsamic vinegar
- 1 cup fresh cranberries
- 2 tbsp honey
- 1 tsp dried rosemary
- 1 tsp dried thyme
- Salt and black pepper to taste
Instructions
1. Prepare the Crust:
- Season the beef roast generously with salt, pepper, rosemary, and thyme.
- Heat olive oil in a large Dutch oven over medium-high heat. Sear the roast on all sides until browned, about 3-4 minutes per side.
- Remove the roast and set aside. Add onion and garlic to the pot, sauté until softened, about 5 minutes.
- Return the roast to the pot. Pour in beef broth and balsamic vinegar. Bring to a simmer, then cover and reduce heat to low. Braise for 2.5 to 3 hours, until beef is fork-tender.
- In a small saucepan, combine cranberries, honey, and 2 tbsp of the braising liquid. Cook over medium heat until cranberries burst and sauce thickens, about 10 minutes.
- Slice the beef roast, drizzle with the cranberry balsamic glaze, and serve warm.
