For the Crust:
- 2 lbs beef shank
- 1 large red onion, thinly sliced
- 8 oz cremini mushrooms, sliced
- 4 cloves garlic, minced
- 2 cups beef broth
- 1/2 cup red wine
- 2 tbsp tomato paste
- 2 tbsp olive oil
- 1 tsp dried thyme
- Salt and black pepper to taste
Instructions
1. Prepare the Crust:
- Season beef shank with salt and pepper. Heat olive oil in a large pot and sear shank on all sides until browned, then remove.
- In the same pot, add red onion and cook over medium heat until caramelized, about 10 minutes. Add mushrooms and garlic, cooking until softened.
- Stir in tomato paste, red wine, and beef broth. Return beef shank to the pot, add thyme, and bring to a simmer.
- Cover and braise on low heat for 2.5–3 hours until beef is fork-tender. Serve hot with sauce and onions.
