For the Crust:
- 2 lbs boneless, skinless chicken thighs
- 1/2 cup sweet chili sauce
- 1/4 cup soy sauce
- 3 cloves garlic, minced
- 1 tablespoon rice vinegar
- 1 teaspoon grated fresh ginger
- 1 tablespoon cornstarch mixed with 2 tablespoons water
- Sliced green onions and sesame seeds for garnish
Instructions
1. Prepare the Crust:
- Place chicken thighs in the slow cooker.
- In a bowl, whisk together sweet chili sauce, soy sauce, garlic, rice vinegar, and ginger. Pour over chicken.
- Cover and cook on low for 6 hours or high for 3 hours, until chicken is tender.
- Remove chicken and set aside. Pour liquid into a saucepan, bring to a simmer, and stir in cornstarch slurry. Cook until thickened into a glossy glaze.
- Return chicken to slow cooker or a serving dish, pour glaze over, and toss to coat. Garnish with green onions and sesame seeds before serving.
