A simple, hands-off slow cooker recipe where chicken thighs become incredibly tender in a sticky, sweet, and savory glaze with garlic and chili notes.

For the Crust:

  • 2 lbs boneless, skinless chicken thighs
  • 1/2 cup sweet chili sauce
  • 1/4 cup soy sauce
  • 3 cloves garlic, minced
  • 1 tablespoon rice vinegar
  • 1 teaspoon grated fresh ginger
  • 1 tablespoon cornstarch mixed with 2 tablespoons water
  • Sliced green onions and sesame seeds for garnish

Instructions

1. Prepare the Crust:

  1. Place chicken thighs in the slow cooker.
  2. In a bowl, whisk together sweet chili sauce, soy sauce, garlic, rice vinegar, and ginger. Pour over chicken.
  3. Cover and cook on low for 6 hours or high for 3 hours, until chicken is tender.
  4. Remove chicken and set aside. Pour liquid into a saucepan, bring to a simmer, and stir in cornstarch slurry. Cook until thickened into a glossy glaze.
  5. Return chicken to slow cooker or a serving dish, pour glaze over, and toss to coat. Garnish with green onions and sesame seeds before serving.
