For the Crust:
- 1.5 lbs lamb shoulder, cut into 1-inch cubes
- 2 large onions, finely chopped
- 3 cloves garlic, minced
- 1-inch piece ginger, grated
- 2 tomatoes, pureed
- 1/2 cup plain yogurt
- 2 tbsp vegetable oil
- 1 tsp cumin seeds
- 1 tsp turmeric powder
- 1 tbsp coriander powder
- 1 tsp garam masala
- 1/2 tsp red chili powder
- 1/2 cup water
- Salt to taste
- Fresh cilantro for garnish
Instructions
1. Prepare the Crust:
- Heat oil in a large pot over medium heat. Add cumin seeds and sauté until fragrant.
- Add onions and cook until golden brown. Stir in garlic and ginger, cooking for 1-2 minutes.
- Add lamb cubes and brown on all sides. Mix in turmeric, coriander, chili powder, and salt.
- Pour in tomato puree and yogurt, stirring well. Add water, cover, and simmer on low heat for 1.5-2 hours until lamb is tender.
- Stir in garam masala and cook for another 5 minutes. Garnish with cilantro before serving.
