For the Crust:
- 2 medium cucumbers, smashed and chopped
- 4 cups seedless watermelon, cubed
- 1 cup crumbled feta cheese
- 1/4 cup fresh mint leaves, chopped
- 1/4 cup fresh cilantro, chopped
- 1/4 cup red onion, thinly sliced
- 3 tablespoons extra virgin olive oil
- 2 tablespoons fresh lime juice
- 1 teaspoon honey
- Salt and black pepper to taste
Instructions
1. Prepare the Crust:
- Place cucumbers on a cutting board and smash lightly with a rolling pin or the flat side of a knife until they crack, then chop into bite-sized pieces.
- In a large bowl, combine smashed cucumbers, watermelon cubes, crumbled feta, mint, cilantro, and red onion.
- In a small bowl, whisk together olive oil, lime juice, honey, salt, and pepper until well combined.
- Pour the dressing over the salad and toss gently to coat all ingredients evenly.
- Let the salad sit for 10 minutes to allow flavors to meld, then serve immediately.
