Description

A crispy, tangy side dish featuring smashed radishes roasted to perfection with garlic and herbs.


Ingredients

For the Crust:

  • 1 pound radishes, trimmed and cleaned
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon lemon juice

Instructions

1. Prepare the Crust:

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Place radishes on the baking sheet. Use a glass or flat utensil to gently smash each radish until slightly flattened.
  3. In a small bowl, mix olive oil, minced garlic, thyme, salt, and pepper. Drizzle over the smashed radishes, tossing to coat evenly.
  4. Roast in the preheated oven for 20-25 minutes, until edges are crispy and golden.
  5. Remove from oven, sprinkle with fresh parsley and lemon juice. Serve warm.

Notes

You can customize the seasonings to taste.
