Description

A comforting pasta dish featuring tender lemon-marinated chicken served over spaghetti with a rich, garlicky tomato sauce and melted cheese.

For the Crust:

  • 8 oz spaghetti
  • 2 boneless, skinless chicken breasts, sliced
  • 2 tbsp olive oil
  • 1 onion, finely chopped
  • 4 cloves garlic, minced
  • 1 can (14 oz) crushed tomatoes
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 lemon, juiced and zested
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

1. Prepare the Crust:

  1. Cook spaghetti according to package instructions until al dente. Drain and set aside.
  2. In a bowl, toss chicken slices with lemon juice, zest, salt, and pepper. Let marinate for 10 minutes.
  3. Heat olive oil in a large skillet over medium heat. Add chicken and cook until golden and cooked through, about 6-8 minutes. Remove and set aside.
  4. In the same skillet, add onion and garlic. Sauté until softened, about 3 minutes.
  5. Stir in crushed tomatoes and oregano. Simmer for 10 minutes until sauce thickens.
  6. Return chicken to skillet, then add cooked spaghetti. Toss to combine.
  7. Sprinkle mozzarella and Parmesan over the top. Cover and cook on low until cheese melts, about 2-3 minutes.
  8. Garnish with fresh basil and serve hot.

Notes

You can customize the seasonings to taste.
