For the Crust:
- 8 oz spaghetti
- 2 boneless, skinless chicken breasts, sliced
- 2 tbsp olive oil
- 1 onion, finely chopped
- 4 cloves garlic, minced
- 1 can (14 oz) crushed tomatoes
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1 lemon, juiced and zested
- 1 tsp dried oregano
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
1. Prepare the Crust:
- Cook spaghetti according to package instructions until al dente. Drain and set aside.
- In a bowl, toss chicken slices with lemon juice, zest, salt, and pepper. Let marinate for 10 minutes.
- Heat olive oil in a large skillet over medium heat. Add chicken and cook until golden and cooked through, about 6-8 minutes. Remove and set aside.
- In the same skillet, add onion and garlic. Sauté until softened, about 3 minutes.
- Stir in crushed tomatoes and oregano. Simmer for 10 minutes until sauce thickens.
- Return chicken to skillet, then add cooked spaghetti. Toss to combine.
- Sprinkle mozzarella and Parmesan over the top. Cover and cook on low until cheese melts, about 2-3 minutes.
- Garnish with fresh basil and serve hot.
