For the Crust:

  • 8 oz spaghetti
  • 2 boneless, skinless chicken breasts, sliced
  • 1 cup sun-dried tomatoes in oil, chopped
  • 3 cloves garlic, minced
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. Cook spaghetti according to package instructions until al dente, then drain and set aside.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken slices, season with salt, pepper, and Italian seasoning, and cook until browned and cooked through.
  3. Add minced garlic and sun-dried tomatoes to the skillet, sauté for 1-2 minutes until fragrant.
  4. Pour in heavy cream and bring to a simmer. Stir in Parmesan cheese until the sauce is smooth and creamy.
  5. Add fresh spinach to the skillet and cook until wilted, about 2-3 minutes.
  6. Toss the cooked spaghetti into the sauce until well coated. Serve hot with extra Parmesan if desired.
