For the Crust:
- 8 oz spaghetti
- 2 boneless, skinless chicken breasts, sliced
- 1 cup sun-dried tomatoes in oil, chopped
- 3 cloves garlic, minced
- 2 cups fresh spinach
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 tbsp olive oil
- 1 tsp Italian seasoning
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- Cook spaghetti according to package instructions until al dente, then drain and set aside.
- Heat olive oil in a large skillet over medium-high heat. Add chicken slices, season with salt, pepper, and Italian seasoning, and cook until browned and cooked through.
- Add minced garlic and sun-dried tomatoes to the skillet, sauté for 1-2 minutes until fragrant.
- Pour in heavy cream and bring to a simmer. Stir in Parmesan cheese until the sauce is smooth and creamy.
- Add fresh spinach to the skillet and cook until wilted, about 2-3 minutes.
- Toss the cooked spaghetti into the sauce until well coated. Serve hot with extra Parmesan if desired.
