Description

A creamy and flavorful pasta dish featuring tender spaghetti, fresh spinach, and a rich sun-dried tomato cream sauce.

For the Crust:

  • 8 oz spaghetti
  • 1 cup sun-dried tomatoes in oil, drained and chopped
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 4 cups fresh spinach
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

1. Prepare the Crust:

  1. Cook spaghetti according to package instructions until al dente. Reserve 1/2 cup pasta water before draining.
  2. Heat olive oil in a large skillet over medium heat. Add garlic and sun-dried tomatoes, sauté for 2-3 minutes until fragrant.
  3. Pour in heavy cream and bring to a simmer. Stir in Parmesan cheese until melted and sauce thickens slightly.
  4. Add fresh spinach to the skillet and cook until wilted, about 2-3 minutes.
  5. Toss the cooked spaghetti with the sauce, adding reserved pasta water as needed to reach desired consistency. Season with salt and pepper.
  6. Garnish with fresh basil and serve immediately.

Notes

You can customize the seasonings to taste.
