For the Crust:
- 2 cups grated carrots
- 1/2 cup granulated sugar
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp ground ginger
- 1 cup mascarpone cheese
- 1/4 cup powdered sugar
- 1 tsp vanilla extract
- 12 pre-made cannoli shells or pastry cups
- 1/4 cup chopped pistachios for garnish
Instructions
1. Prepare the Crust:
- In a saucepan, combine grated carrots, granulated sugar, cinnamon, nutmeg, and ginger. Cook over medium heat for 10-12 minutes until carrots are soft and mixture thickens. Let cool completely.
- In a bowl, mix mascarpone, powdered sugar, and vanilla extract until smooth and creamy.
- Fill each cannoli shell or pastry cup with a layer of the spiced carrot mixture.
- Top each cup with a dollop of the mascarpone mixture.
- Garnish with chopped pistachios and serve immediately or chill until ready to serve.
