For the Crust:
- 1 small pumpkin (about 2 lbs), peeled and cubed
- 2 tbsp olive oil
- 1 tsp ground cumin
- 1/2 tsp smoked paprika
- 1/4 tsp cinnamon
- Salt and black pepper to taste
- 1/2 cup crumbled feta cheese
- 1/4 cup pomegranate seeds
- 2 tbsp fresh orange juice
- 1 tbsp pomegranate molasses
- 1 tsp honey
- Fresh parsley or mint for garnish
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Toss pumpkin cubes with olive oil, cumin, smoked paprika, cinnamon, salt, and pepper.
- Spread pumpkin on a baking sheet in a single layer. Roast for 25-30 minutes until tender and lightly browned.
- While pumpkin roasts, whisk together orange juice, pomegranate molasses, and honey in a small bowl to make the drizzle.
- Arrange roasted pumpkin on a serving platter. Top with crumbled feta and pomegranate seeds.
- Drizzle the pomegranate-citrus mixture over the pumpkin and feta. Garnish with fresh herbs before serving.
