For the Crust:
- 1 whole chicken (about 4 lbs), patted dry
- 1.5 lbs baby potatoes, halved
- 1 lb fresh green beans, trimmed
- 3 tbsp olive oil
- 2 tsp paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp dried thyme
- 1/2 tsp cayenne pepper (optional)
- Salt and black pepper to taste
- 1 lemon, sliced
- 4 cloves garlic, smashed
Instructions
1. Prepare the Crust:
- Preheat oven to 425°F (220°C). In a small bowl, mix paprika, garlic powder, onion powder, thyme, cayenne, salt, and pepper.
- Rub the chicken all over with 1 tbsp olive oil, then coat evenly with the spice mixture. Place lemon slices and garlic inside the cavity.
- Toss potatoes and green beans with remaining olive oil, salt, and pepper in a large roasting pan. Arrange around the chicken.
- Roast for 1 hour to 1 hour 15 minutes, until chicken reaches 165°F (74°C) internally and potatoes are golden, stirring vegetables halfway.
- Let chicken rest 10 minutes before carving. Serve with potatoes and green beans.
