Description

Rich, fudgy brownies with a hidden layer of spiced sweet potato puree and a tangy cream cheese swirl for a decadent, moist treat.

For the Crust:

  • 1 cup mashed sweet potato puree (about 1 medium sweet potato, baked and peeled)
  • 1/2 cup unsalted butter, melted
  • 3/4 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3/4 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 4 ounces cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 large egg yolk
  • 1/2 teaspoon vanilla extract

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease an 8×8-inch baking pan and line with parchment paper.
  2. In a large bowl, whisk together melted butter, granulated sugar, and brown sugar until smooth. Add eggs and vanilla extract, mixing well.
  3. Sift in flour, cocoa powder, baking powder, salt, cinnamon, and nutmeg. Fold until just combined, then stir in sweet potato puree until batter is uniform.
  4. In a separate bowl, beat cream cheese, 1/4 cup sugar, egg yolk, and vanilla until smooth and creamy.
  5. Pour brownie batter into prepared pan. Drop spoonfuls of cream cheese mixture over the top, then use a knife to swirl gently into the batter.
  6. Bake for 25-30 minutes, or until a toothpick inserted comes out with moist crumbs. Cool completely in pan before slicing.
