For the Crust:
- 1 cup mashed sweet potato puree (about 1 medium sweet potato, baked and peeled)
- 1/2 cup unsalted butter, melted
- 3/4 cup granulated sugar
- 1/2 cup brown sugar, packed
- 2 large eggs
- 1 teaspoon vanilla extract
- 3/4 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 4 ounces cream cheese, softened
- 1/4 cup granulated sugar
- 1 large egg yolk
- 1/2 teaspoon vanilla extract
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Grease an 8×8-inch baking pan and line with parchment paper.
- In a large bowl, whisk together melted butter, granulated sugar, and brown sugar until smooth. Add eggs and vanilla extract, mixing well.
- Sift in flour, cocoa powder, baking powder, salt, cinnamon, and nutmeg. Fold until just combined, then stir in sweet potato puree until batter is uniform.
- In a separate bowl, beat cream cheese, 1/4 cup sugar, egg yolk, and vanilla until smooth and creamy.
- Pour brownie batter into prepared pan. Drop spoonfuls of cream cheese mixture over the top, then use a knife to swirl gently into the batter.
- Bake for 25-30 minutes, or until a toothpick inserted comes out with moist crumbs. Cool completely in pan before slicing.
