A rich and aromatic curry with tender beef, simmered in a spicy coconut milk sauce with fresh vegetables.

For the Crust:
- 1 lb beef stew meat, cubed
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tbsp ginger, grated
- 2 tbsp curry powder
- 1 tsp cayenne pepper
- 1 can (14 oz) coconut milk
- 2 potatoes, diced
- 1 carrot, sliced
- 2 tbsp vegetable oil
- Salt to taste
- Fresh cilantro for garnish
Instructions
1. Prepare the Crust:
- Heat oil in a large pot over medium heat. Add onion, garlic, and ginger, and sauté until fragrant.
- Add beef cubes and brown on all sides. Stir in curry powder and cayenne pepper, coating the beef evenly.
- Pour in coconut milk and bring to a simmer. Add potatoes and carrots, cover, and cook for 25-30 minutes until beef is tender and vegetables are soft.
- Season with salt, garnish with cilantro, and serve hot over rice or with naan.
