Description

A rich and aromatic curry with tender beef, simmered in a spicy coconut milk sauce with fresh vegetables.

For the Crust:

  • 1 lb beef stew meat, cubed
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 2 tbsp curry powder
  • 1 tsp cayenne pepper
  • 1 can (14 oz) coconut milk
  • 2 potatoes, diced
  • 1 carrot, sliced
  • 2 tbsp vegetable oil
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

1. Prepare the Crust:

  1. Heat oil in a large pot over medium heat. Add onion, garlic, and ginger, and sauté until fragrant.
  2. Add beef cubes and brown on all sides. Stir in curry powder and cayenne pepper, coating the beef evenly.
  3. Pour in coconut milk and bring to a simmer. Add potatoes and carrots, cover, and cook for 25-30 minutes until beef is tender and vegetables are soft.
  4. Season with salt, garnish with cilantro, and serve hot over rice or with naan.

Notes

You can customize the seasonings to taste.
