For the Crust:
- 1 lb boneless, skinless chicken breast, cut into strips
- 2 bell peppers (red and green), sliced
- 1 large potato, diced and fried until crispy
- 1 cup cooked white rice
- 2 tbsp soy sauce
- 1 tbsp chili garlic sauce
- 1 tsp ginger, minced
- 2 cloves garlic, minced
- 2 tbsp vegetable oil
- Salt and pepper to taste
- Green onions for garnish
Instructions
1. Prepare the Crust:
- Heat oil in a large pan or wok over medium-high heat. Add chicken strips and cook until browned and cooked through, about 5-7 minutes.
- Add garlic, ginger, and bell peppers to the pan. Stir-fry for 3-4 minutes until peppers are tender-crisp.
- Stir in soy sauce and chili garlic sauce, coating the chicken and peppers evenly. Cook for another 2 minutes.
- In a separate pan, fry diced potatoes in oil until golden and crispy, about 8-10 minutes. Season with salt.
- Serve the spicy chicken and pepper stir-fry over cooked rice, topped with crispy potatoes and garnished with green onions.
