Description

A vibrant and zesty stir-fry featuring tender chicken, crisp vegetables, creamy avocado, and fluffy rice, all tossed in a spicy homemade sauce.

For the Crust:

  • 1 lb boneless, skinless chicken breast, sliced into strips
  • 1 cup jasmine rice, cooked
  • 1 avocado, sliced
  • 1 red bell pepper, sliced
  • 1 cup broccoli florets
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 3 tbsp soy sauce
  • 1 tbsp sriracha
  • 1 tbsp honey
  • 1 tbsp olive oil
  • 1 tsp sesame oil
  • 2 green onions, chopped
  • 1 tbsp sesame seeds

Instructions

1. Prepare the Crust:

  1. Cook jasmine rice according to package instructions and set aside.
  2. In a small bowl, whisk together soy sauce, sriracha, honey, and sesame oil to create the sauce.
  3. Heat olive oil in a large skillet or wok over medium-high heat. Add chicken strips and cook until browned and cooked through, about 5-7 minutes.
  4. Add bell pepper, broccoli, garlic, and ginger to the skillet. Stir-fry for 4-5 minutes until vegetables are tender-crisp.
  5. Pour the sauce over the chicken and vegetables, stirring to coat evenly. Cook for another 2 minutes until heated through.
  6. Divide cooked rice among bowls, top with the spicy chicken stir-fry, and garnish with avocado slices, green onions, and sesame seeds.

Notes

You can customize the seasonings to taste.
