For the Crust:
- 1 lb boneless, skinless chicken breast, sliced into strips
- 1 cup jasmine rice, cooked
- 1 avocado, sliced
- 1 red bell pepper, sliced
- 1 cup broccoli florets
- 2 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 3 tbsp soy sauce
- 1 tbsp sriracha
- 1 tbsp honey
- 1 tbsp olive oil
- 1 tsp sesame oil
- 2 green onions, chopped
- 1 tbsp sesame seeds
Instructions
1. Prepare the Crust:
- Cook jasmine rice according to package instructions and set aside.
- In a small bowl, whisk together soy sauce, sriracha, honey, and sesame oil to create the sauce.
- Heat olive oil in a large skillet or wok over medium-high heat. Add chicken strips and cook until browned and cooked through, about 5-7 minutes.
- Add bell pepper, broccoli, garlic, and ginger to the skillet. Stir-fry for 4-5 minutes until vegetables are tender-crisp.
- Pour the sauce over the chicken and vegetables, stirring to coat evenly. Cook for another 2 minutes until heated through.
- Divide cooked rice among bowls, top with the spicy chicken stir-fry, and garnish with avocado slices, green onions, and sesame seeds.
