Description

A quick and flavorful stir-fry featuring tender chicken, crisp bell peppers, and a spicy sauce, served over fluffy rice.

For the Crust:

  • 1 lb boneless, skinless chicken breast, sliced into strips
  • 2 tablespoons vegetable oil
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 tablespoons soy sauce
  • 1 tablespoon sriracha
  • 1 teaspoon red pepper flakes
  • 1 cup cooked rice
  • 2 green onions, chopped
  • Salt and black pepper to taste

Instructions

1. Prepare the Crust:

  1. Heat vegetable oil in a large skillet or wok over medium-high heat.
  2. Add chicken strips and cook until browned and cooked through, about 5-7 minutes. Remove and set aside.
  3. In the same skillet, add bell peppers and onion. Stir-fry for 4-5 minutes until slightly softened.
  4. Add garlic and ginger, cooking for 1 minute until fragrant.
  5. Return chicken to the skillet. Stir in soy sauce, sriracha, and red pepper flakes. Cook for 2 minutes, stirring to coat everything evenly.
  6. Serve the stir-fry over cooked rice, garnished with chopped green onions.

Notes

You can customize the seasonings to taste.
