For the Crust:
- 2 boneless, skinless chicken breasts
- 1 cup long-grain white rice
- 2 large potatoes, cut into fries
- 1 bell pepper, sliced
- 1 zucchini, sliced
- 1 onion, sliced
- 2 tbsp olive oil
- 1 tsp paprika
- 1/2 tsp cayenne pepper
- 1 tsp garlic powder
- Salt and pepper to taste
- 1/4 cup chopped fresh parsley
Instructions
1. Prepare the Crust:
- Preheat oven to 425°F (220°C). Toss potato fries with 1 tbsp olive oil, salt, and pepper, then spread on a baking sheet. Bake for 25-30 minutes until golden and crispy.
- Cook rice according to package instructions. Fluff with a fork and set aside.
- Season chicken breasts with paprika, cayenne pepper, garlic powder, salt, and pepper. Heat remaining olive oil in a skillet over medium-high heat and cook chicken for 6-7 minutes per side until cooked through. Let rest before slicing.
- In the same skillet, add bell pepper, zucchini, and onion. Sauté for 5-7 minutes until tender-crisp. Season with salt and pepper.
- Assemble plates with rice, sliced chicken, sautéed veggies, and golden fries. Garnish with fresh parsley and serve hot.
