A vibrant and flavorful bowl featuring tender, spicy garlic chicken served over creamy hummus and a refreshing cucumber salad.

For the Crust:

  • 1 lb chicken breast, cut into strips
  • 3 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper
  • 1 tsp cumin
  • Salt and pepper to taste
  • 1 cup hummus
  • 2 cucumbers, diced
  • 1/2 red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • 2 tbsp lemon juice
  • 1 tbsp olive oil
  • Cooked quinoa or rice for serving

Instructions

1. Prepare the Crust:

  1. In a bowl, combine chicken strips with olive oil, minced garlic, paprika, cayenne, cumin, salt, and pepper. Marinate for 10 minutes.
  2. Heat a skillet over medium-high heat. Cook the chicken for 6-8 minutes, until cooked through and slightly charred.
  3. In another bowl, mix diced cucumbers, red onion, parsley, lemon juice, and olive oil to make the cucumber salad.
  4. To assemble, spread a layer of hummus in each bowl, top with cooked quinoa or rice, then the spicy garlic chicken, and finish with the cucumber salad.

Notes

You can customize the seasonings to taste.
