A vibrant and healthy bowl featuring tender spicy garlic chicken, creamy hummus, and a refreshing cucumber salad.

For the Crust:

  • 1 lb boneless, skinless chicken breast, cubed
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1/2 tsp cayenne pepper
  • 1 tsp cumin
  • Salt and black pepper to taste
  • 1 cup hummus
  • 1 large cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • 2 tbsp lemon juice
  • 1 tbsp olive oil
  • Cooked quinoa or rice for serving

Instructions

1. Prepare the Crust:

  1. In a bowl, toss chicken with olive oil, minced garlic, smoked paprika, cayenne, cumin, salt, and pepper.
  2. Heat a skillet over medium-high heat and cook chicken until golden and cooked through, about 8-10 minutes.
  3. In another bowl, combine cucumber, red onion, parsley, lemon juice, and olive oil to make the cucumber salad.
  4. To assemble, divide cooked quinoa or rice among bowls, top with spicy garlic chicken, a generous scoop of hummus, and the cucumber salad.
  5. Serve immediately and enjoy.
