For the Crust:
- 1 lb boneless, skinless chicken breast, cubed
- 2 tbsp olive oil
- 4 cloves garlic, minced
- 1 tsp smoked paprika
- 1/2 tsp cayenne pepper
- 1 tsp cumin
- Salt and black pepper to taste
- 1 cup hummus
- 1 large cucumber, diced
- 1/2 red onion, thinly sliced
- 1/4 cup fresh parsley, chopped
- 2 tbsp lemon juice
- 1 tbsp olive oil
- Cooked quinoa or rice for serving
Instructions
1. Prepare the Crust:
- In a bowl, toss chicken with olive oil, minced garlic, smoked paprika, cayenne, cumin, salt, and pepper.
- Heat a skillet over medium-high heat and cook chicken until golden and cooked through, about 8-10 minutes.
- In another bowl, combine cucumber, red onion, parsley, lemon juice, and olive oil to make the cucumber salad.
- To assemble, divide cooked quinoa or rice among bowls, top with spicy garlic chicken, a generous scoop of hummus, and the cucumber salad.
- Serve immediately and enjoy.
