For the Crust:
- 1 lb chicken breast, cut into strips
- 2 tbsp olive oil
- 4 cloves garlic, minced
- 1 tsp paprika
- 1/2 tsp cayenne pepper
- 1 tsp cumin
- Salt and pepper to taste
- 1 cup hummus
- 1 large cucumber, diced
- 1/2 red onion, thinly sliced
- 1/4 cup fresh parsley, chopped
- 2 tbsp lemon juice
- Cooked quinoa or rice for serving
Instructions
1. Prepare the Crust:
- Season chicken strips with paprika, cayenne, cumin, salt, and pepper.
- Heat olive oil in a skillet over medium heat. Add minced garlic and sauté for 1 minute.
- Add seasoned chicken to the skillet and cook until golden and cooked through, about 6-8 minutes.
- In a bowl, combine diced cucumber, red onion, parsley, and lemon juice to make the cucumber salad.
- To assemble, divide cooked quinoa or rice among bowls, top with spicy garlic chicken, a generous scoop of hummus, and the cucumber salad.
