For the Crust:

  • 1 lb chicken breast, cut into strips
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper
  • 1 tsp cumin
  • Salt and pepper to taste
  • 1 cup hummus
  • 1 large cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • 2 tbsp lemon juice
  • Cooked quinoa or rice for serving

Instructions

1. Prepare the Crust:

  1. Season chicken strips with paprika, cayenne, cumin, salt, and pepper.
  2. Heat olive oil in a skillet over medium heat. Add minced garlic and sauté for 1 minute.
  3. Add seasoned chicken to the skillet and cook until golden and cooked through, about 6-8 minutes.
  4. In a bowl, combine diced cucumber, red onion, parsley, and lemon juice to make the cucumber salad.
  5. To assemble, divide cooked quinoa or rice among bowls, top with spicy garlic chicken, a generous scoop of hummus, and the cucumber salad.
